All About Sushi

The main ingredient in sushi is raw fish and rice which is very low in fat, but high in vitamins, protein, and carbohydrates. Sushi is commonly served raw and in Western dishes may have cream cheese or mayonnaise inside. Sushi is a good source of calcium and iodine. Any other vegetables that may be wrapped up in the sushi would add vitamins and nutritional value as well.

Because there is a health risk with raw fish, regulations require it to be frozen for at least 24 hours before serving. Parasites and infection can be avoided once the raw fish is frozen. It can also be boiled or preserved temporarily in salt or vinegar to help reduce the risk of parasite infection.
